Mix the flour and salt in a mixing bowl. Add the butter and cut it into the flour rapidly using 2 table knives, until the butter is in tiny pieces. Do not work for more than a few minutes. Add half the water, and with a fork, quickly blend it into the mixture. Add just enough of the rest of the water to allow you to gather the dough together with your hands into a firm ball. Wrap the dough in plastic film of waxed paper and refrigerate for 2-3 hours until outside surface is slightly frozen.
Roll out on a floured surface with a rolling pin.

Dust the steak and kidney with seasoned flour and mix with the chopped parsley. Melt the dripping, and fry the onions and meat in the fat until lightly browned. Cover with the stock, bring to the boil and simmer gently for 1 to 1.5 hours. Correct the seasoning with salt and pepper to taste.
Put the meat in a pie dish, cover it with pastry and brush the pastry with a beaten egg. Bake in a 200.C (400.F or gas mark 6) oven for 1 hour or until golden brown.
