Put the marinade ingredients into the pot that will be used for cooking the meat. Put in the meat and allow to marinate for 24 hours at room temperature, turning often.
The next day, pour in the milk and cook the meat, uncovered, in an oven preheated to 180"C (350"F or Mark 4). After about 1 hour, increase the heat to about 200"C (400"F or Mark 6) and continue to cook, basting regularly, for another 20 minutes or until the meat is browned.
At the end of cooking, the milk will have almost evaporated, transformed into an exquisite sauce which should be Served on the sliced meat.
