Preparing the ingredients. Cut lean pork - here, fillet - into 2.5 cm (1 inch) cubes. Cut an equal number of slightly smaller cubes of dry bread, and twice as many squares of bacon. Place all the pieces in a bowl. Mix olive oil with pepper, salt and mixed herbs. Pour it over the pieces and mix it in.
Assembling on the skewers. Thread the meat and bread on to long skewers, sandwiching the pork between bacon squares and placing a cube of bread between each sandwich. Grill the skewered meat and bread at medium heat for 15 minutes, turning the skewers regularly to ensure even cooking.
Serving. Rinse lettuce leaves and dry them on paper towels, then slice them into thin shreds. Place the lettuce in a serving bowl. Mix lemon juice, salt, a little olive oil and, if you like, sugar in another bowl. Dress the lettuce with the mixture. Arrange the skewers on the lettuce; garnish with lemon sections.
