Heat the oil in a large saucepan over a medium heat. Add the onion and garlic and fry for about 5 minutes or until a little brown. Stir in the minced beef and fry until the beef is evenly brown. Add the chopped tomatoes, tomato purée, stock, sherry, flour and parsley. Lightly season with salt and pepper.
Simmer gently for an hour until it forms a thick, flavoursome sauce.
Cook the spaghetti as per the packet (usually 10 minutes)
